This is Passero, an Italian restaurant located in Temma, near Minami-Morimachi.

Today, we would like to introduce our signature dish: "Stuffed Quail with Red Wine Sauce." For this special dish, we carefully handle the quail, remove the bones, and stuff it with minced chicken thigh, liver, kumquat, and mushrooms. In addition, we add guanciale made from pork cheek as a secret ingredient to give it a richer flavor. Finally, a red wine-based sauce is poured over the dish, further enhancing the overall taste.
