筍の特徴として、えぐみがほとんど無く、茹でる際にぬかを使う必要がないと言われています。当店でも、いつもとは少し異なる方法で筍を茹で、新しい味わいを試しています。この時期ならではの風味豊かな筍を、是非お楽しみください。

This is Italian restaurant Passero, offering Italian cuisine in Tenma, around the Minami-Morimachi area. We have just received top-grade bamboo shoots from Kagoshima Prefecture, perfect for this season. These bamboo shoots are so fresh they are air-shipped, and even though there's no display price at the market, they continue to sell quickly—it's a product purchased only by those in the know. I was intrigued and decided to buy them.

The bamboo shoots are characterized by having almost no bitterness, and it is said there is no need to use rice bran when boiling them. At our restaurant, we are trying a slightly different method than usual when boiling the bamboo shoots, experimenting with new flavors. Please enjoy the richly flavored bamboo shoots unique to this season.
